WHOLE LEG HAM WITH FENNEL, WHOLEGRAIN MUSTARD AND SHALLOT GLAZE.

Serves: 8

Ingredients:
7-8kg cooked Woolworths whole leg ham
Fresh lemon leaves, to garnish
Lemons, halved, to serve
Fennel, wholegrain mustard and shallot glaze
2 tablespoon Woolworths Select fennel seeds
60g Woolworths Select butter
4 large fresh French shallots, very finely chopped
1 tablespoon fresh thyme leaves
2 tablespoons Woolworths Select wholegrain mustard
2 tablespoons Woolworths Select Dijon mustard
1/4 cup Woolworths Select pure blend honey
1/4 cup Woolworths Select white balsamic vinegar

Method:
1. Fennel, wholegrain mustard and shallot glaze. Toast fennel seeds in dry frying pan over medium heat until fragrant, then grind in a mortar using a pestle. Melt the butter in a small saucepan over a medium heat, add the shallots, thyme and ground fennel. Cook while stirring until the shallot has become soft and translucent. Add mustards, honey and balsamic and simmer for 2 minutes. Remove from heat.
2. Make a wavy decorative cut through ham rind about 10cm from shank end of leg. To remove rind, run thumb around edge of rind, just under skin. Start pulling rind from widest edge of ham. Continue to pull rind carefully away from fat up to the Shank. Remove rind from ham.
3. Preheat oven 190⁰C fan forced. Meanwhile, using a very sharp knife, carefully make cuts into the ham fat stopping just at the meat, about 2-3cm apart, in a criss-cross (diamond) pattern. Wrap shank end in baking paper then foil to prevent over-browning. Put into a large roasting pan lined with baking paper. Using one-third of glaze, brush generously over the ham.
4. Cook for 1 1/2-2 hours, basting every 30 minutes with more glaze or until ham is browned and glaze is caramelised. Remove from oven. Stand 30 minutes. Remove foil and paper from shank. Transfer to a serving platter. Garnish with lemon leaves and lemon halves.

Tip 1: Ham can be prepared for glazing and the glaze can be made up to one day ahead. It's best to glaze ham just before cooking.
Tip 2: Wrap the rind in a damp tea towel and place in the fridge. Use the rind to wrap the ham before storing. Leftover ham will keep about 7-10 days on the bone stored in a Woolworths Ham Bag.
Tip 3: The baking paper catches any sticky glaze as it drips from the ham, making cleaning baking dish a breeze. Alternately cook ham in a large foil roasting pan but place it on a heavy tray so easy to put in and out of the oven.
Tip 4: When carving, start at the pointy end of the ham (opposite end to hock).
